Mac n cheese is a childhood staple, at least it was for me. But I can't say when I started to develop a pallet for more decadent foods that Kraft or Stouffer's mac n cheese was doing it for me anymore.
Plus with knowing what I know now about adding balancing a meal, I took it upon myself to recreate a childhood classic. And it's super simple. This one I whipped up in less than 5 minutes because I already had noodles cooked. This is great to make for your personal lunch bowl or to take to a BBQ or potluck.
What you need:
1 box of Brami pasta (or another protein pasta like Banza)
1-2 Cups of shredded Cheddar cheese (I used Raw Farm personally)
1/4 cup Unsweetened Nut Milk or whole Milk
3 tbsp Hemp Seeds
What to do:
Boil your pasta according to the directions.
Let it cool and toss into either a bowl (for individual) or into a large Pyrex pan for serving. Toss on your cheese and milk and mix well. Toss in the microwave for 1-2 minutes (raw milk cheese doesn't take as long to melt so adjust accordingly) until fully melted.
If you want more cheesy, then, by all means, add more! The milk is to help make it creamier and can also be adjusted based on personal preference.
Top off with some hemp seeds for some added fats and protein with no impact to the flavor profile.
Pro Tip: Cooking the pasta ahead of time can help make this an even quicker go-to lunch option when in a pinch.
