Recipe: Beet & Arugula Salad

I love. a good salad and adding color and flavor is how I keep myself from getting bored. This salad is great to make in the summer and can also be great for that transition to fall too.






What do you need:

1 cups Arugula

1 handful of Roasted Beets (I get these premade from the store)

1/2 cup Diced Cucumber

3-4 diced strawberries

1/4 cup Feta Cheese (optional)

1 tbsp Hemp Seeds

Dressing of choice (I love either Primal Kitchen or simple Olive oil and balsamic)

1/2 cup Ground Beef, cooked and seasoned with salt, pepper, and garlic (or another protein like salmon, chicken or shrimp are great too)


What to do:

Cook your protein how you like it!


Assemble all your ingredients into your bowl and top with your desired amount of dressing. Toss well and enjoy!
