Recipe: Pear & Arugula Salad


This salad is a great fall salad to whip up for family dinners, or holiday meals to share. I brought this to a friendsgiving and it was a hit! Plus it took no time at all to throw together.


For a full meal, you can top off with some chicken or salmon for some added protein.


What you need:

  • 1 cup dried sweetened cranberries

  • 14 oz bag arugula leaves

  • 1 cup raw cheddar, cubed

  • 2 lg bosc pear *thinly sliced

  • 2 cup chopped walnuts

  • 1 cup sprouted pumpkin seeds

  • 1-2 avocado, diced (optional)

Dressing:

  • 1 cup extra virgin olive oil

  • 6 tbsp balsamic vinegar

  • 2 tbsp dijon mustard

  • 2 tbsp crushed garlic (about 3 lg garlic cloves)

  • 1 tsp sea salt

  • 1 tsp black pepper


What to do:

Mix all your salad ingredients into one large bowl.


Add all salad ingredients into a container and blend until well-mixed. Top off your salad and serve. To enjoy more later, add some un-dressed arugula to the salad to bolster it back up!
