Recipe: Simple Chimichurri



When I think of summer recipes I think of light and fresh flavors! Chimichurri is a super simple way to brighten up your meals this summer but also add a punch of flavor!


This is great to add to really any dish - chicken, steak, shrimp, salmon, eggs.. you name it! I had it two times in one weekend once with chicken tacos and another on a plate with steak and asparagus. Different mixes of flavors still give you that fresh & bold taste.


What you need:

- 1 Medium red chili

- 5 cloves of garlic

- 2 tbsp oregano (fresh is best!)

- 1/2 cup of finely chopped parsley

- 1 green onion

- 1/2 cup olive oil

- 2 tbsp red wine vinegar

- 1/2 lime, juiced

- salt and pepper to taste


What to do:

Add all your ingredients into a bowl and let it marinate for at least 30 minutes (but the longer the better!!) Add to your meal and enjoy.
