What is summer without a little BBQ?! I grew up eating bbq all the time with my family so it brings back instant childhood memories.
I love creating a variety of kabobs because it's an easy way to serve a meal and you do the prep work before and then clean up is quite easy (is anyone else a huge fan of this?!?).
What you need:
2 lbs organic chicken breasts, boneless skinless
3 cloves garlic
2 cups pineapple chunks, fresh
1 bell pepper
1 Onion
2/3 cup Barbecue sauce (I love Noble Prime Classic BBQ)
Kabob Skewers
What you do:
Grab your kabob skewers and pre-soak them in a bowl of water for about 15 mins.
Grab your pineapple, red bell pepper, and onion and dice up into chunks/quarter-size pieces. Then set aside.
Next, dice up your chicken into cubes and place in a bowl. Mix in. your 2/3 cup bbq sauce and toss until fully coated.
Take your skewers out of the water and pat dry. Then start assembling your kabobs. I love to create a pattern/order on my kabobs but you can honestly load them up however you want! Just be sure to leave enough room on the end for you to pick them up (about 1.5 in).
When you have your kabobs loaded, place them on the grill on medium heat for about 20-25 mins, rotating them for even cooking. Cooking time may vary based on your grill so be sure to keep an eye on them!
Either eat them off the kabob or strip off and enjoy on your plate. They work great for BBQs and parties!
**One thing to note with making any bbq is the sauce you use! Sauces are often packed with hidden (or sometimes not-so-hidden) sugars! Some of my favorite brands that are lighter on the sugar and still heavy on the flavor are Primal Kitchen & Noble Made.
