Recipe: Carrot Cake Overnight Oats

A spin-off of your regular overnight oats recipes. I love finding ways to use what I already have in my fridge in a variety of ways!

I love to snack on carrots but sometimes just don't feel like having them with hummus. This is a simple recipe to add to your breakfast rotation. If you just have baby carrots or whole carrots, using a peeler to shave off some strips those work just as well!

What you need:

- 1/2 cups oats

- 1 scoop of protein powder

- 3/4 cup cashew milk (or milk of choice)

- 2 tbsp of chia seeds

- 1 tbsp maple syrup

- 1 tbsp shredded carrots

- 1/2 tbsp shredded coconut

- chopped walnuts (optional)

- cinnamon

What to do:

In a bowl or container mix your oats, milk of choice, chia seeds, maple syrup, shredded carrots, coconut, and cinnamon. Mix together until everything is just covered by liquid.

Leave in the fridge for at least 1 hour but overnight is best! Add additional shredded coconut, carrots, and hemp seeds if desired before grabbing a spoon and digging in!
