Recipe: Chocolate Chunk Power Balls

Let's be honest. Some days are just crazier than others! We are humans living in a busy world. And sometimes, as much as we try, it's hard to slow down to make a healthy snack. Convenience is great but it's even better when it supports our health goals when we don't have much time.

Cue in my chocolate chunk power balls. I have been making these for years, even before I was super into health honestly just because they taste good. But I love them even more because I know how good of an option they are for me when I'm on the move!

These are perfect for grabbing to heading out the door when you need a good protein, fat, and fiber source until you have time for a full meal!

& the best part - is you can iterate these! If you have something you think would taste great added in, DO IT!

What you need:

1/2 cup chopped cashews (raw)

1/2 cup pumpkin seeds

2-3 tbsp chia seeds

3 tbsp hemp seeds

1/4 cup chopped chocolate chunks

1/4 shredded coconut

1 cup of peanut butter

2 tbsp of honey (optional)

What to do:

Add all your mixture into a bowl and mix until becomes dough-like (you can use a spoon but honestly your hands work well too!) Place the bowl in the fridge for 30 minutes to help it harden a bit.

Then roll into small balls and place in an air-tight container. Recommended keeping in the fridge to help keep their shape.
