Recipe: Lamb Meatballs

We are big fans of Greek food in my household, originally being from the DC area, my husband and I were both frequent visitors to CAVA. So having a fun lamb meatball in the rotation allows us to make our own greek bowls and change up from chicken once in a while (with minimal effort!) And Greek bowls are one of many bowls we have on repeat.

Toss these bad boys in the air fryer while you prep the rest of the meal and you have lunch or dinner ready in under 30 minutes. Also really easy to batch cook these if you want to have them on hand for the week.

Now I will be honest, this one wasn't perfectly measured out. Sometimes eyeballing helps you find the best flavor balance.

What you need:

  • 2 pounds of ground lamb (found at my local sprouts!)

  • 1/2 cup cauliflower bread crumbs

  • salt

  • pepper

  • garlic powder

  • oregano

What you need to do

Dump your ground lamb into a bowl and add your seasoning based on your desired taste profile.

Add in 1/2 a cup of bread crumbs (I used cauliflower bread crumbs for a lower carb option but also to add in more veggies). These help with the binding of the meatballs.

Toss in the air fryer at 375 F for 15/20 minutes (you want the internal temperature for lamb to be about 145 degrees F.

I'm a big fan of the air fryer because it helps get them nice and crispy.

Toss into your bowl, salad, or dinner plate with other Greek fixings, and enjoy!

**Pro-tip: having some tzatziki dip pairs PERFECTLY!
