I wish I had made this earlier in the summer because it is so refreshing & hydrating. The PERFECT combo fo the summer snack or dinner pairing.
With cucumber and watermelon both super hydrating (packed with around 80%+ water) they are a great way to eat your hydration if you want to change up sipping on water.
You just need a few simple ingredients!
What you need:
3 cups of diced watermelon
1-2 cups of diced cucumber
2 tbsp olive oil
1 tbsp lime juice (about half a lime)
1 tbsp chopped mint
salt & pepper to taste
(you can make this with a cup of feta but I wanted a dairy free one)
What to do:
Mix the olive oil, mint, lime juice, and salt and pepper in a bowl. In another bowl add you watermelon, cucumber, and feta if you're adding any. Toss the dressing ontop and use a spatula or spoon to mix together. Chill in the fridge first before serving for best taste!
I have paired this with dinner but also had a snack by itself. How will you enjoy it?!
