Recipe: Creamy Chicken Enchiladas (df)

Taco Tuesday is a staple in my household BUT if you feel like you want to do something a little different, and add some flare to it, here is a great addition to throw in: Creamy Chicken Enchiladas!


Super easy, and you can make the filling all on one pan (if its big enough) and then toss it all into a baking dish. Super simple which for busy days, who doesn't love that!




What you need:

1-2 pounds of organic chicken, cubed

1 onion (honestly red or white is fine based on preference), diced

1 can of green chilies

1 jar of Siete Enchilada Sauce (I love the green one, but either work!)

Miyokos Spreadable Cheddar Cheese (but you can use regular cheese if you can handle dairy!)

1 bunch of cilantro

6-8 large tortillas (I love Siete's Burrito sized OR Ezekiel's sprouted tortillas

EVOO







What to do:

🔥Pre-heat your over to 350 degrees.


🔥Sautee your diced chicken with a little bit of olive oil in a large pan with salt, pepper, and garlic. Add in the red onion and green chiles until all is cooked.


🔥Prep your tortillas by warming up slightly either on a clean warmed pan, or in the microwave for a few seconds. Warming them will help when you roll to prevent them breaking/cracking. Take your warm tortilla and add your choice of cheese, a spoonful of the enchilada sauce, and then add in your chicken filling.


🔥Roll it up & place it into an oven baking dish. Placing them tightly together will help you fit more, depending on how many you are cooking.


🔥Top all off with the rest of the enchilada sauce & optional cheese.


🔥Bake for 20-25 mins & enjoy!


Pair with your favorite salsa, some guacamole, or just sliced avocado, or rice & beans. Then DIG IN & enjoy!! This dish will fuel you and taste good in the process. Who said you need to go out to enjoy good tasty Mexican dishes?!
