Recipe: Pumpkin Protein Chia Seed Pudding


I am a big fan of pumpkin, not just for the flavor but the health benefits as well! Did you know that pumpkin is a great source of vitamin A, packed with antioxidants, and rich in potassium and fiber? Plus it can be incorporated into so many warm, grounding, fall dishes.


This pumpkin protein chia seed pudding is an easy way to spice up your chia seeds with a more seasonal touch.


What you need:

  • 1/4 cup Pumpkin puree

  • 1 cup Unsweetened nut milk (or milk of choice)

  • 1 scoop vanilla protein powder (Be Well by Kelly is my go-to)

  • 1 tsp Pumpkin pie spice

  • 1/2 tsp vanilla extract

  • 1/4 cup Chia seeds

  • 2 tbsp Maple syrup (optional, I didn't bc my vanilla protein powder is sweet enough for me!)

What you need to do:

I added my protein powder and milk into a blender to mix well. Then let set to help bring down any excess foam.


In another bowl/container, add your pumpkin, chia seeds, vanilla, pumpkin pie spice, and maple syrup if you're adding it.


Add in the protein-milk mix and gently stir until mixed well. Let set for about 10 minutes and stir again before placing in the fridge for at least an hour or two. I prefer overnight to let fully chill and absorb.


Top with some pumpkin seeds, hemp seeds, cinnamon, and maybe even some cinnamon apples.
